Gingerbread Biscuits with Oats, Nuts & Spelt Flour

Gingerbread men were always a favourite of mine during childhood. I'm not sure if it was just the flavour that enticed me, or more so that they were shaped like amusing little men with colourful buttons. But either way, the sweet smell and taste of ginger definitely evokes a feeling of nostalgia in me. 

We've been making these biscuits a lot recently. They feel quite perfect for this time of year - comforting, delicious and golden brown like the autumn leaves. They're also great to take out as snack on the go - we've been munching down ours on long country walks with flasks of hot cacao & oat milk. The sweet spiciness of cinnamon and ginger is so warming in this cooler weather - kind of like chai but in biscuit form! 

Ginger Biscuits from Oats & Spelt Flour (Wheat free vegan)

These biscuits are the long-lost cousin of another creation of ours - these spelt & dark chocolate cookies, which are also really tasty. We've mixed up the ingredients though and have added in extra spice for the autumn months. 

To sweeten, we've been using organic black strap molasses (we use the Meridian brand), which we love as a healthy, alternative sweetener. Molasses is extracted during the process of sugar production, in which all the good nutrients from the raw sugar cane are concentrated into the molasses syrup. Unlike refined sugar, molasses contain a lot of essential vitamins and minerals - being high in iron, B vitamins, calcium and magnesium. And it has a great flavour for baking too!

Ingredients (Makes 12 biscuits)
1 and 1/2 cups of wholegrain spelt flour
1 cup of oats
1/2 cup of coconut oil, melted
1/3 cup of black strap molasses
1 tablespoon of ground ginger
1/2 tablespoon of cinnamon
1/2 teaspoon of bicarbonate of soda
pinch of sea salt
a handful of chopped nuts & seeds - almonds or brasil work great in this!  

1.Line a baking tray with greaseproof paper and pre-heat your oven on gas mark 4. 
2.In a large mixing bowl, thoroughly combine all your ingredients. (Your coconut oil needs to be melted in a liquid state). Make sure everything is mixed well and there are no lumps of molasses in the mixture.  
3. Using your fingers, press the mixture into biscuit shapes on your baking tray. 
4. Place the biscuits in the oven for 7 minutes. After this time, turn the tray around and bake for another 7 minutes. (In total, the biscuits will cook for around 14 minutes - turning the tray ensures an even bake!) The aim is that the biscuits just begin to turn golden. 
5. Allow to cool and they're ready to enjoy <3
